Curmudgeon, I don't know much about American cheese, but I'd use something that goo's up well. In Britain, I use a mature cheddar. I use dry or fresh crumbs - whatever comes to hand. The fresh might brown a bit too fast in the oil.

Nigel, where's our 'Can y Melinydd'? I think you've already refreshed 'Hob y Deri Dando' so if anyone wants to make up any Mudcat verses ...
