I've only done this with public-domain tunes (really old ones, or ones with no known composers), but I've done it.

Most songs' lyrics don't fit the same meter from one verse to the next. I've written lots of dulcimer tab with lyrics and I just write it once with the assumption that whoever plays it will be smart enough to figure it out.
