I have spelled and seen jewelry spelled many ways and I thing all are acceptable as long as archaic usage is acceptable. Here are some thoughts.

Jewelry- The bracelets I make are Jewelry
Jeweller - A person who makes Jewelry
Jewellery - The place where a Jeweller make Jewelry.
