Take about a cup of peanut butter and put it in your Crock Pot with a couple cans of chicken broth and a little milk (or cream if you want it really thick), mix it all up, let it cook on low all day while you're at work. Marvelous. It's also good with chunky veggies in it like celery, carrots, and onions. You could even put chicken in it if you like. Some folks like to serve it with chopped peanuts on top. A lot of people think peanuts and chicken don't go together... but... how many of you have eaten peanut chicken at an Asian restaurant? Also Mister had a friend years ago that used to make a West African dish with chicken and peanut butter. Nowadays we tend to think of peanuts and peanut products in terms of sweets and candy, but really, a peanut is a legume, like beans and peas, and is really versatile. Some say it goes well with mayonnaise. ;-) I have made pea soup before, too. Mmmmmmmmmm. Me and my Crock Pot, well, we're damn nigh inseparable for the winter months. |
