England holds the record. Canada isn't even ranked.

I believe I have solved the mystery of gnu's two tablespoon fish cake recipe. Gnu is Canadian, and Canada uses the metric system. So, there are no tablespoons in Canada! TBSP doesn't mean tablespoon. It means tremendously big sumbitchin' patty, which is exactly what fish cakes are supposed to be.

The joys of my new life continue to abound. :ast night we went to a bonfire in Dani's back yard and shot the breeze for several hours, nibbling roasted marshmallows and watching the juveniles use the roasting sticks as dueling sabers. Haha! All fun and games until someone loses an eye, but no one did. Tonight we dined al fresco at Ixtapa -- a genuinely Mexican Mexican restaurant hidden just past our quaoint downtown area.

The might Eno, swollen by recent rains, is marching more rapidly down the Neue River Basin toward the Chespeake and the Atlantic. Cardinals have begun doing thier fevered mating ritual and blooms keep popping up on every hand--iris, jonquils, daffodils, and a score of unnamed beauties. Spring in North Carolina is extremely vivid, celebratory, vital and vibrant.

Sunday I played bluegrass with a few of the boys at the local pub for several hours, most enjoyably.

Life is just one blessed thing after another around here, I tell ya.

Here's a great tradition recipe for fish cakes! You'll love it!

Dette trenger du
500 gram fiskefilet uten skinn og ben
1 spiseskje potetmel
1 egg
2 dl melk og fløte (Tilsammen 2 dl, altså en blanding. Blandingsforholdet bestemmer du, jeg bruker 1 dl av hver.)
1/2 - 1 ts salt
Pepper og muskatnøtt etter smak
Et par stilker finhakket vårløk eller tilsvarende mengde gressløk

Slik gjør du
Fisken må som sagt være fersk og den må også være iskald. Skjær fisken i biter og ha den i en kjøkkenmaskin med kniver sammen med salt. Kjør det sammen i 15-20 sekunder. Tilsett resten av ingrediensene og kjør videre til alt er godt blandet. Formes i hendene og stekes på panne på begge sider til de er gjennomstekt og gylne på utsiden. Man kan også steke kakene raskt i panne, legge dem på stekebrett og deretter steke dem i ovnen i ca ti minutter på rundt 200 grader.

Jeg serverte rykende varme og ferske fiskekaker til saltkokte poteter, hjemmelaget hvitløksmajones, blandet med litt crème fraiche, noen skiver sitron og blomkålpuré. I dag blir det de samme kakene med resten av potetene som jeg steker, hvitløksmajonesen, samt litt råkostsalat med søt paprika.

Of course, I'd put onions inner but Mum's 90 and onions don't sit well wit' 'er, eh wha'? Mum's havin' at the fishcakes fer her supper again tonight so ya gotta know they're good, roight?

I gotta flat tire on me utility trailer what has sat where she's at for three years. I assume the seal let go. Or, a seal bit it.

The guy who wrote that fish cake recipe must be the same one who decided a 24 ounce can of ground coffee will make 210 cups. The only way to get 210 cups of coffee from it is to use a thimble for a coffee mug. Real coffee drinkers use at least a 12 ounce mug and real fish cake eaters make fish cakes, not fish snacks.

I was bored while waiting for the salt fish to boil so I read the recipe on the Shoal Water Seafoods package. "Form mixture into cakes or patties, approximately 2 tablespoon per cake." WTF? WTF? Seriously, W.T.F!? TWO TABLESPOONS!? Now, I have never measured but mine gotta be ten, minimum. Near the size of a baseball before I flattens 'em. Two a my fishcakes an' yer blood pressure goes up 10+ points. Two tablespoons? Who ever heard a that? Bluenosers they be! Outta Digby across The Bay. Amos, good luck with the upcoming eye adjustment. I suspect I will have something like that in the middle-distance future. And I hope Pat's rescheduled event goes smoothly and as planned. Last time I was in for surgery (a bunionectomy) I was asked to draw on my right foot with a ball-point pen to indicate the correct place for surgery. Just so they don't ask you to write a treatise on how to perform the surgery.

Hi, Mom! I just ran my nuts through a sieve! Okay, it was really a colander, not a sieve. A metal thing with a bunch of 3/16" holes in it. No, Pat's surgery will NOT be today. After a long chain of CYA and miscommunication and "blame somebody else" by the hospital, it has been moved to it's "original" date of April 13. To say that she is furiously, lividly, angry would be an understatement.

The last double translucent silk picture of "subspace" defied photography but 2D ink is fine. Pictures on glass with a mirror behind that reflects a different image is also hard to photograph.

(example: hummingbird painting that has a leaping dancer painted on the other side of the glass masked by the humming bird. This genre can contrast fanciful ideas or a person's 'inner self') Infinity light boxes are another version that can contain painted or photographic surprises. These things only take a few days.

The big stuff is slow going however.

My great grandfather was an illustrator for the then brand new Sears &Roebuck Catalog. He used crosshatching to depict shadows. In an ink medium I use a very rapid depiction of a random quantum field of wave chaos for shadows. (beyond scribbles) At 6 feet away the chaos disappears and a macro whole emerges.

To correct my cataracts I would be facing four surgeries due to the complications of Fuchs dystrophy. They would have to go in a specific order and over the course of 2 years. Since Fuchs varies hourly with changing corneal thickness and bubbles there are days I have better than average vision and times that discourages driving or art. Yesterday I did an ink on enamel portrait of Leonard Bernstein conducting a grand pause from imagination, not a photo. It is a "painterly" blend of impressionism and realism in my minds eye but to normal vision it might be crap.

Meanwhile creams, salt drops & polarized light still helps greatly.

I am home. Now the fun starts.

Amos, I had cataracts in both eyes corrected last year. Toric lenses were installed; I had to pay about $400 each but the results are very well worth it. For one thing, I can (legally) drive WITHOUT glasses now. For another, I can shoot laser beams out of my eyes whenever I want to; this has left lines of burned out cars all over several states.

Hi, Mom! The pump for my water well died last Thursday, but a replacement arrived today and has been installed. It's nice to have running water again. Seven years ago my right eye got its lens replaced with premium smart plastic. I haven't worn glasses since, but lately the left eye has begun to cloud up; so today it was off to the Eye Center where a focussed and brilliant and helpful staff stabbed me with bright lights and dilated my pupils with wicked potions. Seems the left eye has caught up in decline with where the righrt once was so another plastic clever lens will be plucked from the Engineering Miracle Assembly Line and stuck in my face. I am being assimilated. A few weeks out and the job will be done; when complete my worldview will be pathetically bright and sickeningly cheery, full of friendly flavors and promise. Right now, though, not so much; I can barely read without going crosseyed trying to make out the blurry characters. Dilation sucks.

There I was, shipwrecked in the Arctic, and all that stood between me and cannibalism (there were others present) was a shipload of food.

Wait, that doesn't sound very endangering. I'll work on it.

Currently I am in Indiana, and too bright and early tomorrow we shall wing out way home. By this time tomorrow I should be comfortably ensconced in my humble little cabin on the claim.

Ah, the adventures! The excitement! But since we did not see the Aurora we will have to venture to Yellowknife, or Whitehorse, or Fairbanks. A reprise of the Norway journey will have to wait a bit.

I did some cooking this evening as well, made a pot of beef vegetable soup. No recipe, just keep adding ingredients until it seems about right. It's cooling a bit before I put it in the fridge. This will be for lunch this week. MOM insisted this was the best activity on a rainy day (but now she's sleeping off a bottle of wine - a little of it went into the soup, the rest into MOM.)

I have a form of OCD... Obsessive Cooking Disorder. Today's 'recipe' is under construction on-the-fly. I always cut-and-paste from the last one (it was a cross rib beef roast). One might ask, "Yer 60 effin' years old and you can't just eyeball 'em?" No. The beef sold here has changed in the past several years. And I don't just mean that the prices have tripled. The quality and consistency have as well, thereby requiring me to become fastidious in my culinary endeavours. Indeed, I have had to branch out in my choice of cuts due to the increase in prices, cheap old bastard that I am. I fondly recall just buying a bone-in blade roast and cooking it 'by eye' (That there? An hour and fifty minutes at 350.) without caring about the outcome because it was ALways delicious.

Frozen, on counter 1200, fridge 1600, two days in fridge (note blood in pics)
1130 out of fridge, on tray with plastic on
1250 on plate, colder side up, between stove and counter, gather veggies
1350 oven at 325 (1553 actual time – 1403 oven at temp)
1400 wash roast and ready for oven (more blood on plate... a fair bit, actually)
1415 roast in
1435 cover
1500 chop veggies, pot on simmer
1530 veggies on high
1545 out and take the temp 152, back in at 1548, out 1558, temp at 140??? (that was fuckin useless)
1600 cut roast, overdone... next time, just take it out and leave it

No, Rap did not see Aurora Borealis. She was supposed to perform aboard the cruise ship, but it was all a big mistake. Aurora must have confused the ship's name with that of a burlesque club at which she had performed in 2014. She never knowingly accepts cruise ship gigs because her co-performer Sven, a rather large Burmese python, gets horribly seasick.

I arrived, as requested, a half hour early. Twas stressful. The perking lot I usually use was closed. I went to the main lot. I entered. There was a car at the gate. The gate was up. The car wasn't moving because the ticket machine wasn't working. Two attendants were fiddling with it. I waited and then saw a car start to enter the lot. I backed up to try to get to the underground lot. Buddy came up behind me and didn't back up. I grew impatient as I had eight minutes to arrive at the appointed time. One of the attendants began to issue handwritten tickets. I arrived with a minute to spare. The doors were closed and the sign said, "CLOSED. PICK UP PHONE <---." No fuckin' phone. A commissionaire asked if I had an appointment. "Yes." "Pick up the phone on the wall at the entrance down the hall on your right." I picked up the phone and the doors opened. Odd that the booking instructions made no mention of this. Odd that water wasn't included in the fast but, when I questioned the booker she said, "Just to be sure, don't drink any liquids during the fast." I asked the tech who made me all gooey... she was also taken aback.

No need to show my Medicare card. Just follow the orange dots on the floor. Apparently, New Brunswick is experiencing a paint shortage. On top of that, apparently, I am the only colour blind person in the fucking world. I just followed the d__s until one set veered off to where I had my mammogram and ultrasound some years back.

About eight people were seated in the waiting area and all I saw were kids colouring books on a table. I used to draw detailed engineering drawings so kids colouring books don't entertain me much. I was pissed. FFS! I was gonna have to wait until all these other people... "Gary Owens." !!!

My appointment was for 10AM. I was outta there at 9:50. The referral from my GP was made in early August so I marvel at the speed. When she said, "That's it, you're done." I ask, with a laugh, "What's the score?" (Irish charm, eh?) She said, "You passed." Of course, she can't really "say" anything. We'll see what the doc says on Wednesday. And, we'll see what he says about the last 'oscopy'. The service might seem slow to some but it's affordable.

There. This oughta get Mom from the bottom of the pile.

Maybe once Rap is back from the north side of the back of beyond MOM won't languish on the bottom rung as often. For now she can come out into the garden with me and weed the potato patch. That should keep her out of trouble (she spent the morning playing PacMan on the Google map app on her phone and almost completely ran down the battery.)

I am beginning to think being around you is a dangerous thing, Rap.

My thoughts will, are, with you and your far better half regarding the "s**t".

12 hour fast and a light and fat free supper so it's skim milk and fruit for supper at 7PM. MONSTER cheeseburger for a snack at 16:00. Sobeys has lean ground beef on for $2.88 a pound. Unfortunately, my last two Vidalia onions were toast so I had to chuck 'em in the garbage and I am now resigned to onion powder as fried yellow onions are just too fattening. I mean, a pound of burger, two slices of processed cheese, more Miracle Whip than most could stand, etcetera... who could add fried onions? MAN I am hungry!
