fermented fruit drinks ?

Subject: fermented fruit drinks ?

grapes = wine

apples = cider

pears = perry

oranges = ????

and what about all the other common fruits pressed for fresh breakfast juices
and medicinal constipation relief..

what are their pisshead equivalents to wine, cider and perry ?

My wife [and myself] needs to know !

If you want a brew that will make you sit up and take notice...

I started with a bottle of that English stuff that has a lot of herbs and flowers in it (a 'traditional' herbal (soft) drink whose name I cannot remember!) - it went off in the fridge!

I used that as the starter - and did a batch of mead (honey) - and left that in the fridge (about 5 deg C) for at least 3 months - it started up again when it returned to room temp!

The trick was a bottom fermenting rather than a top style yeast - a 'lager' rather than 'champagne' yeast... and lots of time at a low temperature...

You can add any fruit juices to it you wish btw, I discovered in later incantations...

Smooooooooooooooooooooooooooth..........

Prison hooch is called "Pruno" for obvious reasons.

A remarkably similar "champagn" is made with lemons and cane sugar.

Ginger Beer - the British stuff - homemade can have a real kick.

Dandilion Wine - my recipe has oranges and lemons in it (aunt's)

Checking an index of my first fermentation book we also have:

Rhubard
Damsom
Flowers
Wheat and Raisin, Kibble Maise and Dates
Parsnip Vino
Vin Fin - (Beet Wine)

And finally Meadon Whisky (he writes Marigold - but I am sure he must been the "pot marigod - winter marigod" that is Calandula.

I forgot about my teapot which has Chinese tea in it. When I checked it a couple of weeks later, there were interesting mold colonies floating on the tea. Should I have added sugar and let it ferment?

I tried making parsnip wine once, from a hand-written recipe found in one of my grandmother's cookbooks. I don't think I did it right, because it was horrible. Won't try that again.

The only think I can think of with oranges is orange wine or the old Quantro advert

Been there, seen that - wasn't going to drink it after everybody ELSE (wasn't MY brew!) ...

When I was working in the prison system, the most common home brew was based on a slice of bread, water and spit. Anything which can be attacked by microorganisms can be turned into some form of booze or other.

M.C.I.D. specifically asked about fruits-to-booze. We do have Kiwifruit wine here.
I suppose anything which has starch or sugars in it can be fermented into something to get you drunk. Providing you are desperate enough.
I once made wine from a grafting-rootstock grape called Albany Surprise. It could be drunk, given the previously mentioned desperation. I still have a couple of bottles, 25 years later, but I gave most of it to a prospective alcoholic.

You did the right thing - you wouldn't want to get caught driving home pithed.


There seem to be so many fruits that either don't have alcoholic drinks. made from them, or so rarely that it isn't named. Why is that? Too much/too little sugar, Too much/too little acid, Too much/too little something else?

Yes, there seems to be too little sugar in fruits and no natural yeasts to make fruit wines (the pedants will say wine only comes from grapes which is were we started) so you have to add it. Elderberry seems to be a common favourite, I use blackberries (plenty around here) but you can use nettles, potatoes, oak leaves, almost anything. It's cheap and very strong. And you don't have to worry about all that rubbish about pinot noir etc. If you distill the brew you may get a visit from those men mentioned in 'Darling Corey'. The Irish distill (illegally) potato wine to produce poteen which will really blow your head off. Liquers are not usually distilled friut wines but brandy bases with herbs, spices, etc added.

My father tried making grapefruit wine once (he did a lot of winemaking and had been making apple and plum wine for years).

It was pretty good for cleaning sinks.

My son is rather fond of a fermented tea concoction called Kombucha. He buys it commercially, and he has also made it himself. I've never tried it.

I don't think the commercial variety has any appreciable amount of alcohol. I think they keep it under 0.5% so it won't be classified as an alcoholic beverage. Wikipedia says it can be up to 1.5% which is still a lot less than beer.
