All ya gotta do is put the kale on a cookie sheet, put olive oil and seasoning (salt or whatever ya like)) on it and bake it at 250 for 45 minutes...

Most any veg given that treatment comes out good - the baking (or roasting) brings out the sweetness due to carmelization of the sugars in the veg.

It kind of crumbles and melts in your mouth. I tried it once after seeing the recipe on ReBootYourLife, or the Forks Over Knives recipe site. I used kale everyday in my juice extraction. Best green drink I've ever had: kale, celery, cukes, lemon, green apples, ginger..very tasty! Before this I had never had kale in my life.:-)

What you need to bake kale to perfection is a special kale baking oven. A regular oven just won't do the job. A good kale baking oven costs about $3,000.

(Yeah, I'm full of shit. But I figure anybody who actually watches Food TV will fall for anything.)

I grow a variety called Sutherland kale, and it's great. It has lasted us through the winter, and 2 days ago we stripped half of the plants, blanched them, and froze them. Very good vegetable for making Caldo Verde soup.
The remnainder are flowering and I will let them go to seed, for next year's crop.

I hope I'm thinking of the same 'greens' as you all. Kale here (UK) is a bit like a tall floppy cabbage. The best sort is 'curly kale' which looks as if it's had an afro hairdo. But I can't imagine baking it! I usually boil it for three minutes and it's done. Any longer and it goes yellow and all the goodness ends up in the water in the pan. It's one of my favourites, bursting with iron and Vit C, and extra good with a knob of butter.

Use a pair of underwear. Avoid the little yellow spot in front and the little brown spot in back. Or, even better, turn them inside out, then put the kale in.

Well, looks like we'll be experiementin' with kale recipes for the next month as the 8 foot row of the stuff is growin' as fast as you can cut it...

Those Kale chips are great! But you need to eat them right away, cause they're too chewy if you wait. Here's a great way to use up some of that abundant Kale - throw a couple of leaves in a blender with any other fruits and veggies you have on hand. Try Kale, blueberries, a banana, a few strawberries, a dab of vanilla yogurt, a few slices of avocado and a handful of fresh spinach, and whip up a fantastic smoothie! Great way to get your greens! YUM!

I'm planting Kale seeds tomorrow. Any wisdom to share?

OR you can mix lots of kale with canned fruit cocktail and cheap whiskey, put it in a blender, puree it, and serve it to someone you don't like.

When I was a child, kale was an animal feed. Whole fields of it were grown and harvested and then made into silage. It was becuase kale didn't keep well that it wasn't thought fit for human consumption.

Years later, when I had my own garden I grew kale as a winter veg. Treated like spinach - picked, washed and dropped into boiling water, Kale makes a marvellous veg to go with a Sunday Roast.

I have more recently bought it from a supermarket but find it tough and stringy unless the leaves are stripped of their veins - I've never baked it though - can't imagine what a hot oven would do to it.

After reading the recipe it sounds yummy and I'm gonna have to try it.

Try braised kale, Bobert. Good as a side dish or served over pasta with parmesan cheese.

The secret with tough kale is to shred it finely before cooking. Chuck it into fast boiling lightly salted water, and the minute it changes colour, strain it, squash, chop, and serve. Sprinkle with balsamic vinegar if you like it; I do.

I too used many years ago to think of kale as animal feed. The Scots used to mock me for liking swedes, as they're cattle-feed up there. And what about ghastly skimmed (or semi-skimmed) milk? Used to be fed to the pigs!

I was working a Green Festival with the Water Generators this weekend. There were a couple of booths with people selling foods made of processed kale. As the joke goes "Tastes like moose turds...good though."
