Barry, I bet this is what you are looking for (didn't know it myself):

SOUTH COAST OF TEXAS by Guy Clark
 D G
The south coast of Texas that's a thin slice of life
A D
It's salty and hard it is stern as a knife
G
Where the wind is for blowin' up hurricanes for showin'
A D
Snakes how to swim and trees how to lean

CHORUS:
G
And the shrimpers and their ladies are out in the beer joints
D A
Drinkin' 'em down for they sail with the dawn
G
They're bound for the Mexican bay of Campeche
D A D
And the deck hands are singin' adios, jolie blon
There's snowbirds in search of that sunshine and nightlife
Fond of greasin' palms down the beach as they're goin'
Ah this livin' on the edge of the waters of the world
Demands the dignity of whoopin' cranes and the likes of Gilbert Roland

(Chorus)

In the cars of my youth how I tore through those sand dunes
And cut up my tires on them oyster shell roads
But nothin' lasts forever say the old men in the shipyards
Turnin' trees into shrimp boats, hell I guess they oughta know

(Chorus)

In Guy Clarke's title cut from "South Coast of Texas," the deckhands are singing "adios, _________" Never could catch the name. One website renders it as "Jole Blonc," but there are so many errors I don't trust it. Anybody know?

From memory Jolie Blon' sounds right -- it crops up a lot in Cajun music, referring to a pretty blonde girl. I'll dig the CD out and see if memory's right!

"Adios, Jole Blon" is correct according to this source.

I think the point of the line is to point out the degree to which two foreign cultures - Mexican and Cajun French - are commingled in that particular area.
