ahhhhh, parsnips! Actually, I like all the root veggies. My idea of winter heaven is to chop up potatoes, rutabaga (swead), sweet potato, turnip, carrot, parsnip and whatever, toss it in olive oil with a bit of salt and pepper and some chopped rosemary, and roast it in the oven till the veggies are a little crispy on the outside and soft on the inside. mmmmmmm.
