I recommend a pennywhistle or recorder. They're small, light, easy to carry, and easy to learn (the basics, anyway). I have a friend who climbed Mt. McKinley with his recorder in his backpack. When he got to the top, he tried to play "This Land Is Your Land," but he couldn't because he was out of breath.
