If you happen to live a mile above sea level, as I do, you have to boil an egg for a full four minutes to get what low-landers would recognize as a 3-minute egg. This is because we have less oxygen here, the air is lighter, and water boils at a lower temperature -- making it cook less efficiently. I'm sure you'll all be pleased to learn this. |
