Here's a little trick I use when I want non-acidic coffee: Take 1 dried apricot half (I use Californian a[rcots; not sure if Mediterranean ones would work as they're a pretty different critter). Drop in coffeepot. Brew coffee. Wait. Drink coffee, discarding apricot half. (If you nibble a bit of the apricot, you will find that it's incredibly bitter and yucky.) By the way, the flavor added by the apricot is a spectacular complement to the flavor of the coffee. |
