We put them in potato salad, too. We mash them. I've used them to bind meatloaf. We make them into potato candy (this seems to be pretty much all over the U.S., though). We fry them in various ways (Hell, we fry everything. We've even discovered a way to fry Coke). There are lots of Germans, Czechs, etc. in parts of Texas and they really go potato-crazy there.
