1. Brown the chops and place them in a clay pot cooker or other covered baking dish. 2. In thst same pan, over medium-low heat, cook onion, carrot, celery, garlic, shallot, etc (diced), until tender. Add a little stewed tomato, wine/stock/etc. Season with oregano, cinnamon (a little), fresh ground nutmeg, fresh parsely, mustard, etc. 3. Pour veggies over the chops and bake for a long time. 4. Remove and discard pork chops, and serve the veggies over rice.
