Hi Dom,

you could try the Irish Session at The Beech, Chorlton (or maybe at the Bowling Green nearby) which is held on a Monday evening from 9 ish onwards. Also a good Irish Session at the Jolly Angler on Saturday evenings, thats sort of behind Piccadilly Station - I think you can google it for the address.
