I always though "pot roasting" came from the time when ovens were not common. The technique then was to put the meat in a heavy cast iron pot with a heavy, dished lid. Put the pot on the hearth in front of your fire, and cover the lid with hot embers from the fire.
Turn frequently, and your meal would be "roasted" in front of the open fire.
