Vegetable and potato dishes (especially curries) are seldom marred by the addition of a little asafoetida (hing in Indian shops). Panch phoron/ punchpuron/ a dozen other spellings (a spice mixture, containing mustard seed, fenugreek, cumin, fennel and something else) is a great addition to veg curries too. |
