Actually, it predates Europeans' encounters with the Passenger Pigeon. The name comes from the 13th c. regional French "tourte" for a round bread. "Tourtière" appeared in the latter half of the 16th c. as the name for the pan in which the tourtes were made. Turtle doves were often part of the recipe, but Petit Robert views tourtière as being fundamentally a pork dish.
