Down here in South New Jersey, a few of our fire departments have an annual muskrat dinner ( in addition to fish frys, oyster roasts, chicken and bisquit suppers, etc.). Never been to one but I hear they are quite tasty. Bound to be some cooking advice on google somewhere!
