Getting a bit more batch cooking done since Mr received his diagnosis and decided to eat more healthy veggie brews. Based on what I've got in the freezer, or am adding to the freezer, I've started composing a week's worth of menu plans to play on repeat for a bit. We had frozen cornbread and veggie chilli today, and there's still enough frozen for the next couple of Tuesdays. I've taken Cajun style black-eyed beans from the freezer for Wednesday (and there's a couple more batches left for future weeks) we'll be having those with brown rice, jerk tofu and greens. Tonight I've made bean burgers to have with chips (home made rustic style) and salad on Saturdays. I need to make a batch of lentil and mushroom ragu for Thursday spaghetti. Not sure what else I've got listed, but it's good to be able to get organised.
