I believe that when cooking with beer you should stick to the same maxim as when cooking with wine - never cook with a wine (or beer) that you would not enjoy drinking.
I recently cooked a slow roast shoulder of lamb and the recipe called for a bottle of dry white wine. I used a good quality Pinot Grigio which we enjoy and the results made me feel that it was well worth it.
