Forgot to add, the sharp taste is very refreshing. If it isn't, it gets dumped. I had a conversation with the guy in the Polski Sklep when I bought some Smatana, and he said his mother made it by simply leaving the cream uncovered in the dairy overnight. Which does sound like a bad recipe to me. Though not unlike sourdough. Reminds me of a bad joke asking what the difference was between a pot of yogurt and a particular nationality - there being more culture in the yogurt.
