Swede, Jon - am I correct that's a turnip? In which case, the wife just made a dish of diced turnips, parsnips, rutabagas, carrots, celery root, fennel, golden beets. Cut into 3/4" pieces, season with salt, pepper, thyme, oregano and rosemary. Put into shallow dish. Sprinkle olive oil and a tablespoon of water, cover, cook in oven until fork-tender. Uncover and roast until browned at the edges.
