I always add the bacon bits back in during the simmering phase. For a thicker chowder, mix a little flour in with the bacon grease just before adding potatoes and stock. A nice variation is to mix diced sweet potatoes with the regular potatoes. For spices try dill weed, thyme, basil and allspice. |
