Pizza Express is notorious for screwing its staff out of their full tip entitlement. I stopped going there for that reason many years ago.

In all the places I eat regularly, I know that the staff get their full share of the tips. And like Stu, I always ask what the situation is when I'm in a restaurant for the first time, though it might put the staff person in question in an awkward situation.
