Incidentally it having been a "shambles", ie a place where beasts were slaughtered and butchered, is a new one to me. Had a quick search on the net, but unfortunately Greene-King want to tell us about the meals (in my experience - though not at the George, quite decent, and value for money), but not the history! Quite possibly though, if they did a fair amount of catering in those far-off days, they would have bought a beast, fetched it to the kitchen door, and killed it there and then. You wouldn't want to carry a dead cow too far!
