After picking off all the meat I could, I crammed the goose wreckage into the Instant Pot along with the customary carrot, onion and celery. The result is about four and a half litres of dark stock with a wonderful aroma, and it's chilling in the fridge while I decide what should go into the first batch of goose soup. Wild rice, I think, after the mirepoix, and chopped leg meat. Any suggestions out there?
