FWIW, the version I heard as a child (sung by Oscar Brand, perhaps? circa late 50's/early 60's) had the line as "from off his leather hide". And YouTube has a version by Jimmie Rodgers (not the singing brakeman, this guy was recording in 1958), who says "thorny hide". So, the line's been changed before.
