Maurice Sendak made a kids' rhyme and minibook that went through the months of the year, with the refrain, "Happy once, happy twice, happy chicken soup with rice," with the first word changing with the months. Might this be it? It is in a little set "The Nutshell Library" with three other minibooks; I saw it again recently but it was first out in I believe the 70s, maybe 60s, and like some other early Sendak could be set to music readily.
