One of my favorite singers, Eddi Reader, just released "Ae Fond Kiss" as the title track of her new album of Burns songs. Eddi is from Glasgow, so she has the authentic sound as well as a gorgeous voice. You can hear a short clip here.

(From her website) "Eddi says she has discovered in Burns something she believes has been overlooked in the approach to his work, and she believes that her interpretations of his poetry will reach more ears than have previously heard him." Being quite well known as a pop singer, she may well be right.
