Then there's the simple spinach crepe. Fry the crepes using your plain old Yorkshire Pudding batter (You can add a little buckwheat flour if you like). I usually add some melted butter to that batter to stop it sticking, don't stir it too muck though or the butter will be absorbed. You need to see the little globules of butter floating. Fill them generously with spinach and sharp cheddar cheese, sprinkle with salt and white pepper, roll them up and serve hot.
