One thing to bear in mind is that when Indians or Pakistanis write the names they use for vegetables, there is often NOT a standard English version of the spelling of the Urdu (or whichever other language or dialect they use). The same goes for culinary dishes, the same "meal" is spelled differently in every curry house you eat in (e.g. Korma /Kurma ). Until somebody takes the anglicised spellings of non-english vegetables and puts them in a dictionary, everyone will have to continue to invent their own spelling of how the pronounce the vegetable.
