I like ones with ongoing folky-type narrative songs as a theme, like in Cat Ballou, Something About Mary, and Jeremiah Johnson, to name a few.

Other than that, I prefer the old Hollywood standard of soundtrack music specifically written for the film in question (like folks like John Williams still do), rather than just an inane collection of sparsely related hits off an old K-Tel collection.
