I must admit that I enjoy the flavour of a mature Cheddar, but that for toasting I prefer Lancashire. I also like a good Stilton or Blue Vinnie, but probably my favourite blue cheese is french St. Agur with it's wonderful creamy flavour. I'm afraid, though, that if I had to pick a single cheese, it would would probably be Swiss Gruyere.
