My favourite cheese is Grana Pedano, which is similar to parmesan. It is sharp and gritty to taste. I like lancashire cheese on toast and grilled till just burnt. I use a good mature cheddar in cooking, for sauces and stuff.
I was lucky enough to do a lot of travelling in the last two years(because of my job) and everywhere I went I bought cheese, and ate cheese. In the East Lombardy region of Italy they eat the grana pedano with localy produced honey. I loved it.
