If you like eggs 'over easy' but you think 'easy' isn't, turn the heat down and put a pan lid, just barely big enough to fit over them, over them.

Omelets are pretty much no-brainers. I like cheese omelets with good salsa slathered over them. You can make 'leftover' omelets too. If the folding part's too much of a pain, just mix everything in and make scrambled whatever. Don't try using portabella mushrooms, they turn everything brown. Tastes good, but it looks an unfortunate accident in your pans.
