Perhaps the best print collections are by Edith Fulton Fowke, printed by the Waterloo Press, I believe. These are paperback volumes available in many music stores. One title as I recall is Folks Songs of Quebec. That one alone should keep you busy for a while! ;-)

I'd also suggest seeking Acadian songs from the Maritime provinces... wonderful stuff!
