There are many references in Shakespeare to the elements of Morris dance, e.g. 'The fool and his ladle', indicating that the 16th century origin is probably not true. It was already so well known when he was writing that he didn't need to explain the facts.
Also, I believe there is at least one 15th Century reference.

The Morisco theory was abandoned long ago.
