Madame P is right about the hygiene - I was under the impression that you had to have a basic certificate of hygeine to work in a kitchen. Even Ramsay was guilty of some basic errors (licking a spoon and putting it back in the pot eurgh!) and I don't recall seeing anyone wash their hands before and after handling the meat.

Mind you, I think I tasted the results - hospital food well deserves its reuptation.
