I love angelfood cake. My grandmother made it from scratch when I was a kid. So did my cousin Kitty Caldwell, who introduced me to John Jacob Niles.
I will bake just about any kind of cake from scratch, except angelfood. The prospect of separating 16 eggs is more than I can face.
A couple of years ago, I found some Amishmen selling cakes in Pittsburgh's Strip District. They had angelfood. So, I bought one. They were Amish. I figured they'd never heard of cake mix. I cut a slice. I took a bite. I tasted box. Fake vanilla and powdered eggs! Even the Amish don't make angelfood cake from scratch.
There is a modern sculpture, all angels and beams, on Bigelow Boulevard, here in Pittsburgh. A flock of wild turkeys has decided it's their home. There's nowhere to pull over on Bigelow, so they're at no risk of being whacked, roasted, barbecued, or deep fried.
