Peas Porridge (cold) appetizer/soup:
1 lb frozen petit pois (or fresh green peas)
2 cups chicken broth/stock
1 cup heavy cream
2 tbsp butter
1 clove garlic, minced fine
salt and pepper to taste
melt butter, saute garlic briefly, add stock/broth and bring to a simmer
add the peas and remove from heat.
cool to room temperature
puree in food processor (or however you puree things)
whip the cream until soft peaks form. fold into pea puree
season to taste with salt and pepper.
chill and serve.
