There seem to have been a great variety of taverns and small theatres that served a similar function as the later music halls. Charles Dibdin was one of the most prolific composers, mentioned above by Q. John Holland was another, composer of "The Mariner's Compass Is Grog" for a production called 'The Two Little Savoyards' put on at the Adelphi Theatre in 1808. Further information really depends on your focus and energy.
