Well, there's a difference between Eastern NC barbeque and Western NC Barbeque. It is always pork, though. In the east it's shredded and in a vinegar sauce. In the mountains it's sliced and in a red sauce. The "pig pickin'" is yet another traditional porky thing. Texas barbeque is beef.
