I would have thought that was the eight-cassette boxed set While the Billy Boils - A Panorama of Australian Folklore, devised & scripted by Warren Fahey, published by The Australian Broadcasting Commission, 1981. I have the set ... and thank you profusely for raising it, since I had been despairing of finding the tune Jacko Kevans set to 'Banjo' Paterson's Santa Claus in the Bush ... and there it is in Program Seven (Cassette four, side A) ... !

I haven't played this much ... or for a while, so I just checked: both songs you mention are sung by their author ... John Dengate for "Bill" and the "Races" (and Jacko sings his own setting of Santa Claus in the Bush).

I doubt that this set has ever re-surfaced on CD(s) It's an ABC production for broadcast as a series on radio ... and it would run to more than six hours - probably best presented as eight CDs, each containing two 25 minute programs, as in the boxed cassette version. It's too big to fit on a single-layer / single-side DVD!
