There is still a regular Monday session at Audlem on the Shropshire Union. It was at the Lord Combermere, but has now moved to the Shroppie Fly I think, right by the canal.
On Monday night also, the Wilkes Head in Leek, accessible from the end of the Leek arm on the Caldon Canal.
There is often music at the Boars head, Middlewich...see "Trent and Mersey music" for up to date information(hepefully!)
