Still waiting for word from someone who lives where bayous occur in the wild.

I got interested because I just visited the bootheel of SE Missouri, where perfectly round islands of trees occur in the fields. Years ago someone told me they were bayous,but I wonder how they formed. I also can't remember how she pronounced it.
