This is getting me in the mood to do some Louisiana cooking. The Joy of Cooking has three recipes fro Jambalaya, including vegetable ("ideal for a picnic supper").

Makes me wonder what kind of picnics they had.

The next recipe calls for diced cooked ham, chicken, sausage, tongue, shrimp, crab etc, alone or in combination. Aha! Jambalaya must be Cajun French for "leftovers"!
