I would second Out of Africa. Dances With Wolves too--by my favorite film composer, John Barry. He also did Lion in Winter, and one of my all time fave soundtracks, Midnight Cowboy.

Another one I can still hear in my head today is the film score from Exodus. IIRC, the "Theme from Exodus" was even a radio hit? Can't recall who the composer was, though. Not all that great music, but it has stuck with me all these years, and the thought of brings memories of a fiercely blue eyed Paul Newman, whom I adored, but must admit didn't seem to fit the role very well in that film.
