Drop Sugar Cookies
(U.S. measurements)Sift into a bowl:
1 1/4 tsp. baking soda
1 tsp. baking powder
4 cups unbleached all-purpose flour
3/4 tsp. saltMix together in another bowl:
2 large eggs
1 1/2 cups canola oil
1 cup buttermilk
1 Tbsp. vanilla extract
1 3/4 cups sugarMix in the dry ingredients about half at a time.
Drop from spoon or small ice cream scoop onto parchment lined cookie sheets
(Give them some space—they expand)Bake at 350ºF for about 10 minutes (or until slightly brown around the edges).
Yields about 4 dozen
