When you cook your lobsters do you throw them into the boiling pot or do you place them in cool water and warm them gently to a boil. They actually go to sleep in a relaxed state by the latter method. Seriously. I used to work for the USDI and a pamphlet was written about this subject. It was called "A case of tense lobsters" or something like that...almost 40 years ago. Works well....less volatility in the pot, too.
